Iraqi Halawat Al-Sama – Ingredients and Preparation Method

Halawat Al-Sama, also known as manna or heavenly sweets, is a popular traditional dessert in Iraq, especially in the Sulaymaniyah region of Kurdistan. This dessert has other names such as manna and salwa, heavenly honey, and sky nectar. Though its ingredients are simple, it requires time to prepare properly.

Ingredients for Halawat Al-Sama

Iraqi Halawat Al-Sama

  • 1 egg white
  • 1 ½ cups of sugar
  • 1 teaspoon of ground cardamom
  • 50 grams of white chocolate
  • 6 tablespoons of toasted white flour
  • 1 tablespoon of lemon juice
  • 1 ½ cups of water
  • Nuts (as desired): pistachios, walnuts, almonds, or other types
  • A pinch of salt

For the coating mixture:

  • 1 tablespoon of powdered sugar
  • 2 tablespoons of cornstarch
  • 6 tablespoons of toasted white flour

How to Prepare Iraqi Halawat Al-Sama

  1. In a pot over medium heat, combine the water, sugar, and lemon juice. Stir the mixture well until the sugar dissolves.

  2. Let the mixture boil for about 15 minutes until it thickens and becomes syrupy.

  3. Separate the egg white from the yolk, and place the egg white in a bowl with a pinch of salt. Whisk it well until frothy.

  4. Toast the nuts in the oven for 10 minutes until golden brown.

  5. Melt the white chocolate by placing it in a microwave-safe bowl and microwaving it until fully melted.

  6. Gradually pour the syrup mixture (from step 2) into the beaten egg white, mixing continuously until the mixture thickens.

  7. Gently fold the melted white chocolate into the syrup and egg white mixture.

  8. Add the ground cardamom and toasted white flour, stirring gently to combine.

  9. Stir the toasted nuts into the mixture and mix well.

  10. Grease a baking tray with butter, pour the mixture into the tray, and spread it evenly. Place the tray in the refrigerator for about 2 ½ hours to set.

  11. To prepare the coating mixture, mix the cornstarch, powdered sugar, and toasted white flour in a large bowl.

  12. Remove the tray from the refrigerator and cut the dessert into medium-sized cubes. Dip each cube into the coating mixture, ensuring it's fully covered.

  13. Place the coated cubes on a serving plate, and your Halawat Al-Sama is ready to be enjoyed!
