Iraqi Jarak with Spices – Ingredients and Preparation Method

Iraqi Jarak is one of the most famous pastries in Iraq, known for its delicious and flavorful taste. It can be served with tea for breakfast and is often filled with dates or cheese. Here’s how to prepare Iraqi Jarak with spices.

Ingredients for Iraqi Jarak with Spices

  • ½ cup of warm milk
  • 2 tablespoons of sunflower oil
  • 6 tablespoons of sugar
  • ½ tablespoon of yeast
  • 1 egg, well beaten
  • ½ teaspoon of rose water
  • ¼ teaspoon each of ground cardamom, ground nutmeg, and ground cinnamon
  • ¼ cup of warm water
  • 2 ½ cups of flour
  • A pinch of salt

  • 1 tablespoon of water
  • 1 egg yolk
  • ¼ cup of sesame seeds

How to Prepare Iraqi Jarak with Spices

  1. In a small bowl, mix ½ tablespoon of sugar with the yeast and warm water. Set aside for 5 minutes to allow the yeast to activate.

  2. In a pot over medium heat, add the liquid milk and the remaining sugar, stirring until the sugar dissolves. Remove from heat and mix in the rose water.

  3. In a large bowl, combine the flour, salt, oil, ground nutmeg, cinnamon, cardamom, and the beaten egg. Mix these ingredients well.

  4. Add the yeast mixture and the milk-sugar mixture to the flour mixture, stirring until a soft dough forms. If the dough is too dry, gradually add a little warm milk.

  5. Knead the dough thoroughly until smooth, then shape it into a large ball and rub the surface with oil.

  6. Cover the bowl with a cloth and let the dough rest for 2 hours to rise and ferment properly.

  7. After the dough has risen, divide it into three equal parts.

  8. Shape each section into a rectangular loaf and place it on a baking tray lined with parchment paper. Make four small cuts at each corner of the rectangle.

  9. Cover the dough again and let it rest for 30 minutes. Meanwhile, preheat the oven to 190°C (375°F).

  10. Brush the dough with the beaten egg yolk mixed with water and sprinkle the surface with sesame seeds.

  11. Bake the Jarak in the oven for about 15 minutes or until the top turns golden brown.

  12. Remove from the oven and serve hot. Enjoy your freshly baked Iraqi Jarak with spices!
