Ingredients for Iraqi Shibak Al-Habayeb Sweets:

  • 2 large eggs.
  • 2 cups of pastry flour (or all-purpose flour).
  • 1½ cups of warm water.
  • 2 tablespoons of baking powder.
  • A pinch of salt (optional, to taste).
  • 1 teaspoon of vanilla extract.
  • Special molds for making Shibak Al-Habayeb.
  • 1 tablespoon of cornstarch.
  • Vegetable oil, for frying (as needed).
  • 1 cup of powdered sugar.
  • 2 cups of sugar syrup (qater).

Method for Preparing Iraqi Shibak Al-Habayeb Sweets:

  1. Mix the Dry Ingredients:

    • Place the flour in a large, deep bowl. Add the baking powder and sift the mixture to evenly distribute the baking powder throughout the flour.
  2. Add the Remaining Dry Ingredients:

    • Add a pinch of salt, cornstarch, and vanilla to the flour. Mix everything well to combine.
  3. Add the Eggs:

    • In a small bowl, beat the eggs with a fork, then add them to the flour mixture. Start kneading the dough.
  4. Add Water Gradually:

    • Gradually add warm water while kneading. Continue adding water until you achieve a smooth and cohesive dough. The amount of water needed may vary depending on the type of flour used, so adjust accordingly.
  5. Rest the Dough:

    • Let the dough rest for about 15 minutes.
  6. Prepare the Frying Oil:

    • Heat a large amount of vegetable oil in a frying pan. Once the oil is hot, dip the Shibak Al-Habayeb molds into the oil for about 5 seconds to prevent the molds from overheating.
  7. Shape the Dough:

    • Dip the molds into the dough, ensuring the dough doesn’t reach the top of the mold. Then, immediately submerge the mold with the dough into the hot oil, moving it gently.
  8. Fry the Sweets:

    • Once the dough is firm, lower the heat slightly and carefully remove the mold using a fork. Continue frying until the sweets turn golden brown. Remove from the oil and place on a paper towel to drain excess oil.
  9. Repeat:

    • Repeat the process with the remaining dough.
  10. Coat with Syrup or Sugar:

  • After frying, dip the Shibak Al-Habayeb into sugar syrup (qater) or sprinkle them with powdered sugar for a less sweet alternative.
