Jordanian Rashouf – A Hearty Bedouin Dish from Traditional Jordanian Cuisine

Ingredients for Jordanian Rashouf:
- ½ cup of coarse bulgur wheat
- ½ cup of lentils
- 2 onions
- 1 cup of chickpeas (pre-soaked and boiled)
- 2 cups of hot water
- ½ cup of rice
Ingredients for Rashouf Yogurt Mixture:
- 1 teaspoon of cornstarch
- 400 grams of sour yogurt
- 1 teaspoon of Maggi seasoning
- 1 cup of hot water
- ½ cup of liquid jameed (a type of dried yogurt)
Preparation Steps:
- Finely chop the onions into small pieces.
- Soak the bulgur wheat in ½ cup of warm water.
- In a blender, mix the liquid jameed, sour yogurt, cornstarch, hot water, and Maggi seasoning, blending them until smooth.
- Pour the yogurt mixture into a medium pot and cook over medium heat, stirring continuously until it thickens.
- Once the mixture has boiled, add additional hot water as needed.
- Gradually add the soaked bulgur, pre-cooked lentils, rice, and chickpeas to the pot, allowing the ingredients to cook together until fully done.
- In a separate pan, sauté the chopped onions in a splash of vegetable oil until golden brown, then add them to the Rashouf mixture.
