Ingredients for Kabab Sabli:
- 1 kg of boneless chicken or beef
- 1 cup finely chopped onion
- 1 cup finely chopped tomatoes
- 1 tablespoon caraway seeds (kala jeera)
- A few whole green chili peppers (uncut)
- 1 tablespoon crushed red chili or to taste
- Salt to taste
- 1 tablespoon mango powder (amchur)
- 1 tablespoon garam masala
- 1 tablespoon crushed coriander seeds
- ½ liter oil for frying
- 2 tablespoons flour or Makki Ka Atta if available
- A few vegetables for garnish
How to Prepare Kabab Sabli:
Blend the Meat: In a blender, add the boneless chicken or beef and the whole green chili peppers. Blend until the mixture becomes smooth and fine.
Add the Ingredients: Transfer the meat mixture to a large bowl. Add the chopped onion, chopped tomatoes, salt, flour, crushed red chili, mango powder, garam masala, coriander seeds, and caraway seeds. Mix everything well until the mixture forms a smooth dough-like consistency.
Rest the Mixture: Place the mixture in a colander in the fridge for about 30 minutes to drain any excess liquids.
Shape the Kababs: Once the mixture is ready, shape it into round patties (like burgers) or long kababs. The round shape is more traditional for Kabab Sabli.
Fry the Kababs: Heat oil in a large, deep frying pan over high heat. Fry the kababs until both sides are golden brown and crispy.
Serve the Kababs: Place the kababs on a clean, flat serving plate. Garnish with sliced tomatoes, parsley or cilantro, or a few lemon wedges for a fresh, colorful touch.
