How to Prepare Kabab with Basmati Rice:
Prepare the Rice: Rinse the basmati rice well, then soak it in water for about 15 minutes.
Cook the Vegetables: Heat the vegetable oil in a pan, add the chopped onions and minced garlic, and sauté until golden.
Add the Vegetables: Add the mushrooms, peas, carrots, and zucchini to the pan, stir-frying them until slightly softened to release their wonderful flavors.
Season the Mixture: Add the spices (salt, turmeric, curry powder, paprika, and black pepper) to the vegetables, mixing thoroughly to infuse the flavors.
Combine with Rice: Add the basmati rice to the vegetable mixture, stirring well to coat the rice evenly with the spices and vegetables.
Cook the Rice: Add enough water to cover the rice, bring to a boil, and once bubbles appear and the vegetables rise to the top, reduce the heat, cover the pot, and let it cook on low for about 15 minutes until the rice is fully cooked.
Prepare the Kabab: Mix the minced meat with the listed spices, egg, and chopped cilantro. Knead the mixture well until fully combined, then shape into medium-sized balls.
Fry the Kabab: Heat the oil in a pan and sear the kabab balls until golden brown. Remove them from the pan and set aside.
Prepare the Sauce: In the same pan, sauté the sliced onion, minced garlic, and chopped green pepper. Add the fresh tomato juice, tomato paste, and a tablespoon of vinegar, stirring to combine for a rich, flavorful sauce.
Cook the Kabab in Sauce: Add the kabab balls back into the pan with the sauce, cover, and let them simmer for about 10 minutes to absorb the flavors.
Serve: Place the cooked basmati rice on a serving dish, top with the kabab and sauce mixture, and enjoy this flavorful meal.
