Kabsa with Muwassat – Recipe and Preparation Method
Kabsa with Muwassat is a delicious main dish that can be served for lunch alongside a salad. It is distinguished by its wonderful taste and the numerous health benefits it provides due to the protein-rich muwasat meat. This recipe is easy to prepare and does not require much time or effort, serving 4-6 people.
Ingredients for Kabsa with Muwassat:
- 4 cups of rice (Basmati rice can be used)
For the Muwassat Mixture:
- 1/2 cup of sunflower oil
- 2 medium-sized onions, finely chopped
- 1 tablespoon of finely grated fresh ginger
- 6 cloves of garlic, minced
- 4 pieces of muwasat meat (meat cuts)
- 2 green chili peppers, finely chopped
- 2 tablespoons of kabsa spice mix
- 1/2 teaspoon of ground black pepper
- 1 tablespoon of salt
- 1 teaspoon of red chili powder
- 1 teaspoon of paprika
- 1 teaspoon of turmeric
- 2 dried limes (also known as loomi)
- 2 bay leaves
- 10 whole cardamom pods
- 3 large tomatoes, finely chopped
Preparation Steps:
Prepare the Rice: Place the rice in a medium-sized bowl, wash it thoroughly, and let it soak for 20 minutes before cooking.
Cook the Muwassat: In an electric pressure cooker, heat the sunflower oil. Once hot, add the finely chopped onions, minced garlic, and grated ginger. Stir with a wooden spoon until the mixture turns light golden.
Add Spices: Add the kabsa spices, ground black pepper, chopped green chili, salt, red chili powder, paprika, and turmeric. Stir for a few minutes until the green chili slightly softens.
Add Meat and Tomatoes: Place the muwasat meat pieces on top, then add the dried limes, cardamom pods, bay leaves, and chopped tomatoes. Mix everything well to combine the ingredients.
Add Water: Pour in 4 cups of boiling water and close the pressure cooker. Set it to high pressure for 15 minutes to cook the meat thoroughly.
Add Rice: After the time is up and the steam has released, open the lid and add the soaked rice. Close the lid again and set the pressure cooker to high pressure for an additional 5 minutes.
Serve: Open the lid, and serve the kabsa with muwasat hot in a suitable dish.
