How to Prepare Kebabs with Yogurt and Mint Sauce:
Prepare the Kebabs:

- In a food processor, combine the shelled pistachios, parsley, mint, garlic, green onions, and regular onion, and blend on medium speed until a smooth mixture forms.
- Transfer the mixture to a large bowl and add the soaked bulgur, ground meat, Pepper Jack cheese, salt, and black pepper. Mix thoroughly using your hands until well combined.
Shape the Kebabs:
- Form oval patties from the kebab mixture and arrange them on a tray. Cover with plastic wrap and refrigerate for 60 minutes. Remove from the fridge and let sit for 10 minutes before grilling.

Prepare the Yogurt Sauce:
- In a medium bowl, combine the yogurt, olive oil, sumac, and ground cumin. Whisk until smooth and well combined, then refrigerate until needed.
Prepare the Mint Sauce:
- In a food processor, blend the chopped mint with olive oil for about 60 seconds until smooth.
Serve:
- On a serving platter, place the yogurt sauce in the center, then drizzle the mint sauce over it. Arrange the kebab patties around the sauce and serve immediately while hot.
