Kefta with yufka is a delicious dish that can be served for lunch or dinner. It is characterized by its wonderful taste and multiple health benefits due to the high protein content in the kefta and the vitamins found in the vegetables. This dish is loved by both children and adults and is easy to prepare, requiring only 25 minutes to cook. This recipe serves five people.

  • 1 packet of yufka pastry
  • 500 grams of ground meat (approximately half a kilo)
  • 1 medium onion, finely chopped
  • 1 large red bell pepper, diced
  • 1 cup of peas
  • 1 cup of finely grated carrots
  • 1 cup of sliced mushrooms
  • 3 tablespoons of finely chopped parsley
  • 2 teaspoons of salt
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon of ground cinnamon
  • 1/2 teaspoon of meat spice mix
  • 1/2 teaspoon of ground black pepper
  • 3 tablespoons of olive oil
  • 2 tablespoons of sunflower oil

How to Prepare Kefta with Yufka:

  1. Cooking the Kefta:

    • In a large pot, heat the sunflower oil over medium heat. Add the ground meat, stirring continuously with a wooden spoon until the meat begins to cook and its moisture evaporates completely.
  2. Adding Vegetables:

    • Add the chopped onion and continue stirring until it turns golden. Then, add the spices, diced red bell pepper, peas, grated carrots, and mushrooms. Mix well and let it cook on low heat for about 5 minutes. Add the chopped parsley, stir for another 2 minutes, and then remove from heat. Allow the mixture to cool slightly before using.
  3. Preparing the Yufka:

    • Take one sheet of yufka and brush it with olive oil using a wide brush. Place another sheet on top and brush it with oil again. Repeat this process for a third and fourth sheet.
    • Place the stacked sheets in an oven-safe dish, ensuring the edges hang over the sides.
  4. Filling the Pastry:

    • Fill the yufka with the kefta mixture, then fold the edges inward to enclose the filling. Brush the top with oil.
  5. Baking:

    • Preheat the oven to 180°C (350°F) and place the kefta yufka in the middle rack. Bake for 20-25 minutes until golden brown.
  6. Serving:

    • Remove from the oven and serve immediately.
