Ingredients for Khobz Al-Mulla:
For the dough:
- 2 cups all-purpose flour
- 2 cups whole wheat flour
- 1 tablespoon salt
- 1 tablespoon instant yeast
- 1 teaspoon baking powder
- ¼ cup powdered milk
- 1 tablespoon sugar
- 2 cups warm water (added gradually)
- ¼ cup vegetable oil
For topping:
- A sprinkle of sesame seeds and black seeds
- ½ cup ghee
- ½ cup honey
- ½ cup mashed dates (Ajwa)
- ½ cup mixed nuts
- Raisins for garnish
Preparation Method:
Prepare the Dough:
- In a large mixing bowl, combine the all-purpose flour, whole wheat flour, salt, powdered milk, baking powder, and instant yeast (dissolved in water with sugar). Add the vegetable oil and mix well.
- Gradually add the warm water while kneading the dough until you achieve a soft yet firm dough consistency.
- Continue kneading for about 10 minutes. Then, place the dough in a large, greased bowl and let it rest for about an hour until it doubles in size.
Preheat the Oven:
- Preheat the oven to 200°C (390°F).
Prepare the Bread:
- Grease a round baking tray with ghee and spread the dough evenly in the tray.
- Sprinkle sesame seeds and black seeds over the dough. Let the dough rest for another 10 minutes in a warm place.
Bake the Bread:
- Bake the bread in the preheated oven until it turns golden brown on the bottom and top.
Finishing Touch:
- Once the bread is baked, remove it from the oven and immediately pour the hot ghee over it while the bread is still warm. This step ensures the bread absorbs the ghee, enhancing its flavor.
- Garnish the bread with raisins, mixed nuts, and mashed dates.
