Kousa with Kofta is a delightful dish often served as an appetizer on Ramadan tables. This meal stands out due to its fantastic taste and numerous health benefits, thanks to its high content of vitamins and proteins that provide long-lasting energy. It’s easy to make, doesn’t require much time or effort, and this recipe serves eight people, taking about 60 minutes to cook.

Main Ingredients for Kousa with Kofta:

  • 6 large fresh zucchini
  • 500 grams of minced meat
  • ¼ cup tomato paste
  • 2 cups broth
  • 2 tablespoons freshly squeezed lemon juice
  • ½ teaspoon ground black pepper
  • 1 teaspoon salt
  • 1 teaspoon mixed spices
  • 2 tablespoons olive oil

For Garnishing:

  • A moderate amount of toasted pine nuts

Preparation Method:

  1. Prepare the Zucchini:

    • Wash the zucchini well, then clean by trimming the top and bottom ends with a sharp knife. Repeat this process for all zucchinis. Cut each zucchini into four thick circles and hollow out three-quarters of each piece, reserving the inner flesh.
  2. Arrange in the Baking Dish:

    • Spread the reserved zucchini flesh in the bottom of a baking dish, creating a base layer. Arrange the zucchini pieces on top, making sure the hollowed side of each piece faces upward.
  3. Shape the Kofta Balls:

    • Form the minced meat into small kofta balls, sizing each ball to fit the hollowed section of the zucchini pieces in the dish. Place a kofta ball into each zucchini piece.
  4. Prepare the Sauce:

    • In a large bowl, combine the broth, lemon juice, black pepper, salt, mixed spices, and olive oil. Whisk the mixture with a plastic spoon for a few minutes until all the ingredients are well blended, forming a smooth sauce.
  5. Pour and Bake:

    • Pour the sauce over the zucchini pieces, ensuring it is evenly distributed to cover all areas. Preheat the oven to 180°C (356°F), place the dish on the middle rack, and bake for 60 minutes until the kofta is fully cooked.
  6. Garnish and Serve:

    • Remove the dish from the oven and garnish with toasted pine nuts. Serve hot.
