Lamb curry is one of the most popular and widely loved dishes in Emirati cuisine. Not only is curry delicious, but it also has numerous health benefits, including aiding in diabetes management, reducing cancer risks, and alleviating heart disease, joint pain, and rheumatism.

Ingredients for Lamb Curry
- 1 kilogram of lamb
- 1 cup of tomato sauce
- 1 teaspoon of dried coriander
- 5 cloves
- 5 tablespoons of curry powder
- 1 tablespoon of red pepper
- 1 teaspoon of cinnamon, unsalted peanuts, and ginger
- 1 tablespoon of turmeric
- Garlic (amount as desired)
- Shredded coconut (amount as desired)
How to Cook Lamb Curry
Cut the lamb into medium-sized pieces and boil them in a pot. Remove any foam that appears, and add a small amount of salt along with two cinnamon sticks.
Continue boiling the lamb until fully cooked and the broth is reduced to around 2 cups. Once done, remove the pot from the heat.
Finely chop the onions and sauté them in oil until softened. Mash the garlic with a little salt, then add curry, turmeric, and dried coriander.
Pour this mixture over the onions and cook together over medium heat.
Roast the cardamom pods with unsalted peanuts, then mash them together and sift the mixture into the pot, adding the cloves as well.
Stir the mixture continuously, and while stirring, sprinkle the selected amount of shredded coconut, along with cinnamon, red pepper, dried coriander, and ginger.
Place the pot over low heat and let the mixture simmer, allowing the ingredients to blend and the coconut to melt into the mixture.
Add the tomato sauce and lamb broth to the pot.
Cook the pot for 30 minutes, then add the boiled lamb. Continue stirring and leave the curry on the heat for another 10 minutes.
