Lamb Salona is a traditional Gulf dish loved by both young and old for its delicious taste. Over time, it has spread to other Arab countries and become a staple on many tables.

Ingredients for Lamb Salona:

  • 1 kg of lamb or beef, cut into medium-sized pieces
  • 2 large potatoes
  • 3 large zucchini
  • ½ cup of green beans, chopped
  • 1 eggplant, sliced into rounds
  • 2 onions, finely chopped
  • 6 tablespoons tomato paste
  • 1 teaspoon each of the following spices: cardamom, ground cinnamon, dried coriander, ginger, black pepper, mixed spices, and turmeric
  • 2 dried lemons (lomi)
  • A pinch of salt
  • Vegetable oil (as desired)

Preparation Method:

  1. Cook the Meat:

    • Wash the meat thoroughly and place it in a large pot. Cover the meat with water and cook over medium heat for about 2 hours until tender.
  2. Prepare the Vegetables:

    • While the meat is cooking, cut the onions, zucchini, eggplant, and potatoes into medium-sized cubes.
  3. Sauté the Onions and Meat:

    • In a separate pan, heat some oil and sauté the onions over low heat until they soften.
    • Add the cooked meat to the pan and stir for 5 minutes.
  4. Add the Vegetables:

    • Gradually add the vegetables, starting with the potatoes, then the green beans, zucchini, and eggplant. Allow a brief interval between each addition to account for different cooking times.
  5. Season the Dish:

    • Sprinkle the spices (cardamom, cinnamon, dried coriander, ginger, black pepper, mixed spices, turmeric) and salt over the meat and vegetables. Add the dried lemons (lomi), and stir well to combine the ingredients.
  6. Add the Broth:

    • Pour the meat broth over the vegetables and meat, ensuring the mixture is well-covered. Bring it to a boil.
  7. Add Tomato Paste:

    • After the broth comes to a boil, add the tomato paste and stir. Let the mixture simmer for about 10 minutes until it thickens.
  8. Prepare the Rice:

    • Soak the rice in warm water for 10 minutes, then drain it.
    • In a pot, heat 3 tablespoons of oil and add the rice. Stir continuously for a few minutes, then add just enough water to cover the rice. Add a pinch of salt.
    • Once the water starts boiling, reduce the heat to low, cover the pot, and let the rice cook for about 20 minutes.
  9. Serve:

    • Place the rice in a serving dish and garnish with some chopped parsley.
    • Serve the Salona in a large, deep dish alongside the rice.
