  • 1 kg lamb with bone, cut into pieces
  • 1 pack of Arabic flatbread (Rgaag bread)
  • 3 tablespoons sunflower oil
  • 5 whole garlic cloves
  • 10 small onions, peeled
  • 1 tablespoon finely grated fresh ginger
  • 3 large tomatoes, peeled and finely chopped
  • 1 tablespoon tomato paste
  • 7 medium potatoes, cut into medium-sized pieces
  • 250 grams pumpkin, cut into medium-sized cubes
  • 1 green chili pepper, sliced
  • 2 dried limes (loomi)
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon meat seasoning
  • ½ teaspoon ground cumin
  • ½ teaspoon dried coriander

Preparation Method:

  1. Marinate and Sear the Lamb:

    • Place the lamb pieces in a medium-sized bowl, sprinkle with salt and black pepper, and rub the seasoning into the meat using your fingertips.
    • Heat sunflower oil in a large pot over medium heat. Once hot, add the lamb pieces and sear until golden on all sides. Remove the lamb and set it aside.
  2. Sauté the Aromatics:

    • Using the same pot, add the garlic and small onions, stirring until they turn a light golden color.
    • Add grated ginger and chopped tomatoes, continuing to stir until the vegetables are well cooked.
  3. Season and Cook the Stew:

    • Add dried limes, salt, black pepper, meat seasoning, cumin, dried coriander, tomato paste, and chili slices. Stir well to combine.
    • Return the lamb to the pot, cover with water if needed, and cook on medium heat for about 60 minutes, allowing the lamb to become tender.
  4. Add the Vegetables:

    • Add the potatoes and pumpkin to the pot, stirring occasionally, and let the stew simmer until the vegetables are cooked, and the broth thickens slightly.
  5. Serve:

    • Break the flatbread into small pieces and place them at the bottom of the serving dish. Pour some broth over the bread, allowing it to soak for a few minutes.
    • Arrange the lamb, potatoes, pumpkin, and dried limes on top and serve immediately while hot.
