Ingredients:
- 1 kg lamb, cut into cubes
- 2 tablespoons sunflower oil
- 1 tablespoon meat seasoning
- 1 teaspoon salt
- 10 cloves garlic, finely minced
- 1 teaspoon spicy pepper paste
- 1 teaspoon dried saffron
- ¼ cup vinegar
- 3 large onions, finely chopped
- 3 cups water
- 1 cup dried apricots
- ¼ cup peeled almonds
Preparation:
Marinate the Lamb:
- In a large bowl, combine the lamb cubes, meat seasoning, salt, minced garlic, saffron, and spicy pepper paste. Mix well using a large plastic spoon to coat the lamb with the spices. Cover the bowl with plastic wrap and let it sit for 60 minutes to absorb the flavors.
Cook the Lamb:
- Heat sunflower oil in a medium-sized pot over medium heat until hot. Add the seasoned lamb and sauté, stirring with a wooden spoon, until the meat is golden brown on all sides. Add the vinegar, chopped onions, and water to the pot.
Simmer:
- Cover the pot and let it cook over high heat for about 40 minutes or until the lamb is fully cooked.
Prepare the Apricots:
- In a separate medium-sized pot, place the dried apricots, add ½ cup of water and ½ cup of lamb broth, and bring to a boil over medium heat for about 5 minutes.
Combine and Final Cook:
- Once boiling, add the apricots and their broth to the lamb pot and continue cooking for another 5 minutes until the apricots are well incorporated.
Serve:
- Turn off the heat, transfer the lamb and apricots to a serving tagine, and garnish with peeled almonds. Serve immediately while hot.
