Ingredients for Lamb Tagine with Potatoes
- 1 kg of lamb, cut into medium-sized pieces
- 1 cup of corn oil
- 1 small teaspoon of ground turmeric, ground cumin, and hot paprika
- 1 onion, finely chopped
- 1 chili pepper, finely chopped
- 3 sweet potatoes and 3 regular potatoes, peeled and cut into large cubes
- ¼ cup of finely chopped parsley and cilantro
- 1 large tablespoon of softened butter
- A pinch of salt and white pepper to taste
- 1½ cups of water
Cooking Method for Lamb Tagine with Potatoes
Prepare the Lamb:
- Heat a pan over low heat, then add the lamb, vegetable oil, turmeric, salt, onion, and white pepper.
- Stir the ingredients well, cover the pan, and let it cook on low heat for 10 minutes.
Add Spices and Water:
- Add the remaining onion, cumin, half the water, paprika, and chili pepper to the mixture. Stir the ingredients until they are well combined.
Bake the Lamb:
- Transfer the lamb mixture into a baking dish, cover it tightly with aluminum foil, and place it in the oven.
- Let it cook for about 60 minutes or until the lamb is tender. Check occasionally as the cooking time may vary.
Prepare the Potatoes:
- In a large pot, boil the sweet potatoes, regular potatoes, and the remaining water for 3 minutes. Drain and set aside.
Combine and Bake Again:
- Add the parsley, cilantro, potatoes, sweet potatoes, and butter to the lamb mixture. Stir everything together well.
- Return the dish to the oven for an additional 10 minutes.
Final Step:
- Remove the aluminum foil and bake the dish uncovered for another 10 minutes until the potatoes turn golden and slightly crispy.
