  • 1 tablespoon gelatin powder dissolved in ½ cup hot water
Third Layer:
  • A suitable amount of melted Lotus spread (if unavailable, whipped cream can be used instead)

Preparation Steps:

  1. Prepare the Biscuit Layer:

    • In a food processor, add the entire amount of Lotus biscuits and process until finely crushed. Then, add the butter and 1 tablespoon of Lotus spread, mixing until well combined.
  2. Set the Biscuit Base:

    • Prepare a cheesecake mold and pour the biscuit mixture into it, pressing it down firmly. Place it in the refrigerator for 15-30 minutes until the biscuit layer sets completely.
  3. Make the Cheese Mixture:

    • In a mixing bowl, combine the cream cheese, cream, sweetened condensed milk, and Lotus spread. Mix on medium speed until you have a smooth, homogeneous mixture. Then, add the hot water with gelatin and blend for an additional minute.
  4. Assemble the Cheesecake:

    • Remove the cheesecake mold from the refrigerator and pour the cheese mixture over the biscuit base. Spread the mixture evenly using a wide spatula. Return it to the refrigerator for six hours (preferably overnight) to ensure it sets properly.
  5. Add the Final Touch:

    • Once set, spread the melted Lotus spread over the top of the cheesecake. Decorate with crushed Lotus biscuits in a neat and even manner.
  6. Serve:

    • Place the cheesecake back in the refrigerator for an additional 30 minutes before serving. Then, remove and serve immediately.
