For the Jareesh:
  • 4 cups of jareesh (crushed wheat).
  • 2 cups of meat, cut into small pieces with the bones removed.
  • 3 pureed tomatoes.

For the Meat Spices:

  • 3 small onions, finely chopped.
  • 3 cloves of garlic, minced.
  • 2 tablespoons of grated ginger.
  • 2 tablespoons of tomato paste.
  • 3 cinnamon sticks.
  • 3 dried black limes (loomi).

For the Jareesh Spices:

  • 2 onions, sliced into thin rings and fried in oil.
  • A variety of spices tied in a cloth, such as coriander and broken cinnamon sticks.
  • 3 hot chili peppers.

For the Shrimp Filling:

  • 1½ cups of shrimp.
  • ½ stick of butter.
  • 1 clove of garlic, minced.
  • 1 teaspoon of mixed spices.

Preparation Method for Maflooq Hassawi with Meat and Shrimp:

1. Toast the Jareesh:

  • In a dry pan over medium heat, toast the jareesh without adding any oil until it is slightly browned.

2. Prepare the Meat:

  • Boil the meat in a small amount of water (around 2 cups) until foam forms on the surface. Skim off the foam and then strain the meat.

3. Prepare the Tomatoes:

  • In a small pot, cook the pureed tomatoes until they thicken, then turn off the heat.

4. Sauté the Onions and Garlic:

  • In another pot, sauté the onions and garlic until they turn golden. Add the meat, salt, cinnamon sticks, spices, tomato paste, grated ginger, and dried black lime.
  • Pour the cooked tomatoes over the onion and meat mixture and stir everything well.

5. Add Water and Jareesh:

  • Add enough water to the pot (similar to the amount used for cooking rice), then add the toasted jareesh. Cook over medium heat until the water is absorbed.

6. Add the Fried Onions and Spices:

  • Once the jareesh has absorbed the water, place the fried onion rings on top along with the tied spice cloth. If the jareesh absorbs too much water, reduce the heat and add a little more water if necessary.

7. Prepare the Shrimp:

  • Sauté the shrimp in butter for about two hours. Add 1 teaspoon of mixed spices and 1 minced garlic clove. Then, place the shrimp on top of the maflooq and cover the pot tightly.

8. Final Steps:

  • The dish is now ready to serve. Before serving, stir the maflooq to mix the ingredients evenly. It’s best served hot.
