Maghmour – Recipe and Preparation Method

Maghmour is a flavorful appetizer that can be served alongside the main course at gatherings, feasts, and family meals, or as a light main dish for dinner. Known for its delicious taste, this dish is rich in vitamins and essential nutrients, making it both healthy and satisfying.

This recipe is easy to prepare, requiring just 25 minutes of cooking time and serving up to six people.

Main Ingredients for Maghmour:

  • 1 kg of peeled eggplant, cut into medium-sized cubes
  • 5 small onions, peeled
  • 15 whole cloves of garlic, peeled
  • 4 large tomatoes, peeled and finely chopped
  • 3 tablespoons of freshly squeezed lemon juice
  • 2 tablespoons of vinegar
  • 1 large green chili pepper, finely chopped
  • 1 teaspoon of salt
  • ¼ teaspoon of mixed spices
  • ¼ teaspoon of ground black pepper
  • 1 teaspoon of dried mint
  • 3 cloves of finely minced garlic

For Frying:

  • A generous amount of sunflower oil

Preparation Method:

  1. Frying the Eggplant: Heat a generous amount of oil in a wide, thick-bottomed skillet over high heat until it is very hot. Fry the eggplant cubes, stirring continuously until they turn light golden on all sides. Remove them from the skillet and place them on paper towels to drain the excess oil.

  2. Frying the Onions and Garlic: In the same skillet, fry the small onions until they turn light golden. Remove them and drain on paper towels. Repeat the process with the whole garlic cloves.

  3. Preparing the Tomato Sauce: In a wide skillet, heat three tablespoons of the previously used frying oil over medium heat. Add the chopped tomatoes, lemon juice, vinegar, chopped green chili, salt, mixed spices, and ground black pepper. Stir the mixture with a wooden spoon and cook for about 5 minutes until the tomatoes are well cooked.

  4. Combining the Ingredients: Add the fried eggplant cubes, onions, and garlic to the tomato sauce. Stir gently to mix all the ingredients well. Cover the skillet and let it cook on low heat for 20 minutes until all the ingredients are fully cooked and the flavors are well combined.

  5. Serving: Transfer the maghmour to a serving dish, sprinkle with dried mint and minced garlic, and let it cool completely before serving. It can be enjoyed cold, adding a refreshing touch to the meal.
