Marinated Salmon – Ingredients and Preparation Method

Ingredients for Marinated Salmon:
- 1.3 kg piece of salmon fillet with the skin intact.
For the brine:
- 6 lemon leaves.
- 1 small lemon, sliced.
- 3 liters of water.
- 3 tablespoons of sugar.
- 1 tablespoon each of black pepper and dried coriander.
- 1 onion, sliced.
- 50 grams of sliced ginger.
For the salmon stuffing:
- 150 grams of finely chopped onion.
- 150 grams of finely chopped red bell pepper.
- 20 grams of finely chopped garlic.
- 2 tablespoons of lime juice.
- 1 tablespoon of honey.
- 1 medium-sized spoon of finely chopped hot chili pepper.
- 1 tablespoon of coconut oil.
- 20 grams of chopped ginger.
- ½ teaspoon of fine salt.
For the sauce:
- 50 grams of butter.
- 5 lemon leaves.
- 2 tablespoons of lime juice.
Preparation Method for Marinated Salmon in the Oven:
Prepare the brine:
- Combine all the brine ingredients in a bowl and stir well. Add the salmon fillet to the brine mixture and leave it to marinate for 60 minutes.
Prepare the stuffing:
- In a pot over medium heat, sauté the onion in oil until softened. Add coconut oil, ginger, garlic, honey, and both types of chili peppers. Stir until the vegetables soften.
- Remove the pot from the heat, and the stuffing is ready.
Prepare the sauce:
- Sauté the lemon leaves in butter, then add the freshly squeezed lime juice and a pinch of salt.
Prepare the salmon for baking:
- Preheat the oven. Place the salmon fillet skin-side down on a baking tray. Spread the prepared stuffing evenly over the salmon and bake for 25 minutes at 175°C.
- Once the salmon is cooked, pour the butter sauce over it, and it’s ready to serve.
