While it takes some time to prepare, it is easy to make and requires 70 minutes to cook, serving six people.

Ingredients for Boiling the Meat

  • 700 grams of chopped meat
  • 1 medium onion, quartered
  • 2 bay leaves
  • 1 stick of cinnamon
  • 10 whole black peppercorns
  • 5 whole cardamom pods
  • 1 teaspoon of salt

Ingredients for the Vegetable Mixture

  • 2 tablespoons of olive oil
  • 1 large onion, thinly sliced
  • 4 cloves of garlic, minced
  • 2 green chili peppers, sliced
  • 2 large potatoes, diced
  • 2 large carrots, diced
  • 6 pieces of frozen artichokes
  • 1 cup of green beans
  • 1 cup of peas
  • 1 large tomato, peeled and finely chopped
  • 2 whole peeled tomatoes
  • 2 teaspoons of mixed spices
  • 1 teaspoon of salt
  • 1/4 teaspoon of ground black pepper

How to Prepare Meat and Vegetables Casserole:

  1. Boiling the Meat:

    • In a large pot, add the chopped meat, onion, bay leaves, cinnamon, peppercorns, cardamom pods, and salt. Cover with plenty of water and simmer over medium heat for about 60 minutes until the meat is well cooked.
  2. Preparing the Casserole:

    • Remove the meat from the pot and place it in a suitable baking dish. Strain the broth, reserving 2 cups for later use.
  3. Vegetable Mixture:

    • In a wide, thick-bottomed skillet, heat the olive oil over medium heat. Add the sliced onion, minced garlic, and green chili peppers, stirring for 30 seconds until mixed.
    • Add the diced potatoes, carrots, artichokes, green beans, peas, and chopped tomatoes. Stir for about 2 minutes using a wooden spoon.
  4. Assembling the Casserole:

    • Pour the vegetable mixture over the meat in the baking dish, then sprinkle with mixed spices, salt, and ground black pepper.
    • In a blender, combine the whole tomatoes and 2 cups of reserved broth. Blend until smooth and pour over the vegetables in the baking dish.
  5. Baking:

    • Cover the baking dish with aluminum foil. Preheat the oven to 180°C (350°F) and place the dish on the middle rack. Bake for 60–70 minutes until the meat is fully cooked and the vegetables are lightly golden.
  6. Serving:

    • Remove from the oven and serve hot.
