Ingredients:
For the Dough:
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup powdered sugar
- 1 large egg
- ½ cup butter
- 4 cubes of cream cheese
For the Apple Mixture:
- 2 large apples
- 1 tablespoon ground cinnamon
- 2 tablespoons granulated sugar
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
For the Cheese Mixture:
- 4 cubes of cream cheese
- 1 large egg
- 1 teaspoon vanilla extract (or powdered vanilla if unavailable)
- ¼ cup granulated sugar
For the Topping:
- 1 large can of blueberries
Preparation:
Prepare the Dough:
- In a mixer bowl, combine flour, baking powder, salt, powdered sugar, egg, butter, and cream cheese cubes. Mix on medium speed for several minutes until you achieve a smooth dough.
Shape the Dough:
- Prepare mini cupcake molds. Form small balls from the dough, roughly the size of a walnut. Place each ball into a mold and press down with your finger, spreading the dough to cover the base and sides. Repeat until all the dough is used.
Make the Apple Mixture:
- Peel and grate the apples. In a medium pot, combine the grated apples, cinnamon, sugar, lemon zest, and lemon juice. Cook over low heat for a few minutes until the apple mixture dries out. Turn off the heat and distribute the apple mixture evenly among the molds.
Make the Cheese Mixture:
- In a large bowl, mix cream cheese, egg, vanilla, and sugar. Whisk with a hand whisk until smooth. Pour this mixture over the apple mixture in the molds.
Bake the Tarts:
- Preheat the oven to 180°C (350°F). Place the tart molds on the middle rack and bake for 15-20 minutes until they turn light golden.
Cool and Decorate:
- Remove the tarts from the oven and let them cool completely. Top with blueberries and serve immediately.
