Moroccan Couscous with Chicken and Vegetables – Recipe and Preparation Method
Moroccan Couscous with Chicken and Vegetables is a traditional dish known for its delicious taste and nutritional benefits, thanks to the vitamins from the vegetables and protein from the chicken. - 1 kg chicken, cut into pieces
- 2 large carrots
- 2 large potatoes, peeled
- 2 large red bell peppers
- 1 large pumpkin or squash
- 1 large onion, peeled and sliced
- 1 teaspoon turmeric
- 1 tablespoon mixed spices
- 2 teaspoons salt
- ½ teaspoon ground black pepper
- 2 tablespoons tomato paste
- 2 tablespoons sunflower oil
- 5 cups broth
- 1 kg couscous
Preparation Method:
Marinating the Chicken:
- In a large bowl, place the chicken pieces and add the turmeric, mixed spices, salt, and ground black pepper. Mix well using your hands to ensure the spices are evenly distributed.
Cooking the Chicken:
- In a large, deep pot, heat the sunflower oil over medium heat. Add the chicken pieces and cook, turning occasionally, until they are golden brown.
Preparing the Vegetables:
- Cut the carrots and potatoes into medium-sized cubes. Remove the seeds from the bell peppers and slice them into wide strips. Cut the pumpkin into medium-sized cubes. Add all the vegetables to the pot with the chicken, stirring occasionally to allow them to sauté and soften slightly.
Adding the Tomato Paste and Broth:
- Add the tomato paste and broth to the pot, stirring to combine all ingredients well.
Simmering:
- Cover the pot with a lid and let it simmer on medium heat for about 50 minutes until the chicken and vegetables are fully cooked and the broth is well seasoned.
Serving:
- Place the couscous on a serving platter, spreading it evenly. Arrange the chicken pieces and some vegetables on top. Serve the remaining broth and vegetables in a small bowl alongside the couscous.
