Ingredients for Okra with Chicken and Tomatoes

  • 1 kg of chicken
  • 2 teaspoons of ground coriander
  • 1 teaspoon of salt
  • ¼ teaspoon of black pepper
  • 3 tablespoons of butter or ghee
  • 1 large onion, finely chopped
  • 6 cloves of garlic, minced
  • 2 green chili peppers
  • 1 kg of okra
  • 4 large tomatoes
  • 2 tablespoons of lemon juice
  • ½ cup of finely chopped fresh coriander
  • ½ cup of finely chopped fresh basil
  • Rice with vermicelli for serving

For the Garlic Mixture:

  • 1 tablespoon of ghee
  • 3 cloves of garlic, minced
  • ¼ teaspoon of ground coriander

Cooking Method for Okra with Chicken and Tomatoes

  1. Season the Chicken:

    • Season the chicken pieces with salt, ground coriander, and black pepper. Set aside to absorb the flavors.
  2. Cook the Chicken:

    • In a large pot, heat the butter or ghee over high heat.
    • Add the seasoned chicken to the pot, stirring until it’s well coated with the butter and begins to brown.
  3. Add Garlic and Onion:

    • Add the minced garlic and chopped onion to the pot, stirring until they become fragrant.
    • Add the green chili peppers and stir well.
  4. Add the Okra:

    • Gently add the okra to the pot, stirring carefully to combine it with the garlic and onion mixture.
    • Reduce the heat and cook for a few minutes until the okra softens slightly.
  5. Prepare the Tomato Juice:

    • Blend the tomatoes with lemon juice in a blender until smooth.
