  • 10 garlic cloves

Preparation Method:

  1. Marinate the Chicken:

    • In a large bowl, combine the black pepper, salt, vinegar, lemon juice, orange juice, ground cinnamon, cumin, garlic cloves, and mustard. Mix well using a plastic spoon until you achieve a smooth marinade.
    • Add the chicken pieces to the marinade, making sure to rub the mixture thoroughly onto the chicken to absorb the flavors. Cover the bowl with plastic wrap and refrigerate for several hours or, ideally, overnight for the best flavor.
  2. Bake the Chicken:

    • Preheat your oven to 180°C (350°F).
    • Transfer the marinated chicken to a baking dish, reserving the remaining marinade. Add the sliced onion to the chicken, mixing it well. Cover the dish tightly with aluminum foil.
    • Place the dish on the middle rack of the oven and bake for 35 minutes.
  3. Prepare the Sauce:

    • While the chicken is baking, heat a large, heavy-bottomed skillet over medium heat. Add the butter and let it melt completely.
    • Add the finely chopped onion and sauté, stirring continuously with a wooden spoon until the onion turns light golden.
    • Pour in the reserved marinade and stir well, cooking for about 5 minutes. Add one cup of water, allowing the mixture to simmer for 10 minutes until it thickens and flavors meld together.
  4. Finish the Dish:

    • Remove the chicken from the oven and discard the aluminum foil. Pour the prepared sauce over the chicken, ensuring it coats the pieces well.
    • Return the baking dish to the oven and continue baking for a few more minutes until the chicken is golden brown and slightly crisp.
  5. Serve:
