Ingredients for Oven-Baked Kuwaiti Medam
- 4 cups of high-quality rice
- 1 kilogram of fish fillet (such as hamour)
- 3 garlic cloves, finely minced
- 3 cups of chopped onions
- ¼ cup of chopped dill
- 3 tablespoons of black pepper
- 2 tablespoons of ghee
- 2 cinnamon sticks
- 3 cardamom pods
- Ginger and salt (to taste)
- 1 teaspoon of mixed spices
- ½ teaspoon of ground cardamom
- 1 dried lime (loomi)
How to Prepare Oven-Baked Kuwaiti Medam
Wash the fish thoroughly using salt and lemon, then drain the water.
In a pot over heat, add the fish along with the ginger, cinnamon, cardamom, and black pepper, stirring well.
Add water to the pot with the fish and spices, stirring occasionally until the fish is cooked.
Once cooked, transfer the fish to cold water to remove the skin and bones, then shred the fish meat.
In a large pan, sauté the chopped onions over heat until golden yellow.
Add the shredded fish to the sautéed onions and stir well. Then, add the dried lime, ground cardamom, salt, mixed spices, dill, garlic, and black pepper. Stir the mixture until fully cooked, then set it aside.
Boil the rice for five minutes, then drain it.
Grease a baking dish with ghee. Layer the rice and fish mixture, alternating between them and adding ghee between each layer, until all ingredients are used.
Cover the dish with aluminum foil and bake in a preheated oven at 180°C (350°F) for about 60 minutes, until fully cooked.
Once done, invert the medam onto a serving plate and garnish with parsley.
