Pasta with Cauliflower – Recipe and Preparation Method
Pasta with cauliflower is a delicious appetizer that can be served at gatherings, events, family dinners, and friend meetups. This dish is known for its unique and tasty flavor and its multiple health benefits due to the cauliflower, which is rich in vitamins beneficial for the human body.
This recipe is very easy to prepare, requiring only 15 minutes for preparation and 35 minutes for cooking, and serves six people.
Main Ingredients for Pasta with Cauliflower:
- 3 tablespoons of raisins
- ½ cup of warm water
- 1 small cauliflower, cut into small florets
- 2 garlic cloves, thinly sliced
- ½ medium-sized white onion, finely chopped
- 8 medium tomatoes, peeled and finely chopped
- 3 tablespoons of pine nuts
- 6 basil leaves, finely chopped
- A pinch of white pepper
- 1 teaspoon of salt
- 500 grams of Penne pasta
- 8 tablespoons of finely grated mozzarella cheese
- ¾ cup of olive oil
- 2 tablespoons of finely chopped parsley
Preparation Method:
Soaking the Raisins: Place the raisins in a small bowl, cover them with water, and let them soak for 15 minutes before use. Meanwhile, in a large pot, bring plenty of water to a boil, adding a little salt. Once the water is boiling, add the cauliflower florets and let them cook for 3 minutes until slightly tender. Remove them using a slotted spoon, placing them in a colander, and set them aside. Reserve the cauliflower water for later use.
In another medium-sized pot, heat 2 tablespoons of olive oil over medium heat. Add the garlic and sauté for 2 minutes until fragrant, then add the chopped onion and continue stirring for 3-5 minutes until lightly golden.
Add the chopped tomatoes, reduce the heat, and let them cook on low heat for 20 minutes. Then add the boiled cauliflower, drained raisins, pine nuts, chopped basil, salt, and white pepper. Let the sauce simmer on low heat for 15 minutes until it thickens.
Bring the reserved cauliflower water back to a boil. Once boiling, add the pasta and cook for about 10 minutes until tender. Drain the pasta and add it to the cauliflower sauce.
Finally, add the grated mozzarella cheese, the remaining olive oil, and half of the chopped parsley, stirring until all the ingredients are well combined. Transfer the pasta to a serving dish, garnish with the remaining parsley, and serve immediately while hot.
