Pasta with Pink Sauce – Recipe and Preparation Method
Pasta with Pink Sauce is a delightful appetizer that can be served at family gatherings, parties, and get-togethers with friends. - 500 grams of Penne or Derby pasta
Sauce Ingredients:
- 4 tablespoons olive oil
- 3 cloves of garlic, finely crushed
- 1 tablespoon vinegar
- 1 large onion, finely chopped
- 2 sprigs of fresh thyme (or rosemary if thyme is unavailable)
- 1 medium red bell pepper, finely chopped
- 1 medium red chili pepper, finely chopped
- 4 large tomatoes, peeled and finely chopped
- 1 tablespoon tomato paste
- 1 tablespoon fine sugar
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
- 1 cup cooking cream
- ¼ cup grated Parmesan cheese
Preparation Method:
Cooking the Pasta: Start by boiling 2 liters of water in a large pot over medium heat. Add the pasta and cook for about 10 minutes until tender. Drain and set aside.
Preparing the Sauce: Heat 2 tablespoons of olive oil in a wide skillet over medium heat. Add the crushed garlic and sauté until fragrant, then add the vinegar and cook for about 3 minutes. Next, add the chopped onion and cook until it turns light golden.
Adding Vegetables and Spices: Add the chopped red bell pepper, chili pepper, and stir until they soften slightly. Add the thyme, chopped tomatoes, and tomato paste, stirring to mix well. Cook on low heat until the tomatoes are fully cooked and the sauce thickens.
Blending the Sauce: Transfer the sauce to a blender and blend until smooth. Pour the blended sauce back into the skillet, add the remaining olive oil, and stir in the cooking cream. Cook for 2 more minutes until the sauce is heated through.
Combining Pasta and Sauce: Add the cooked pasta to the skillet and stir with a wooden spoon until the pasta is well coated with the sauce.
