  • 1 kilogram of green olives
  • 2 ½ tablespoons of salt
  • 4 cups of water
  • A few stalks of celery
  • 1 cup of lemon juice
  • 2 whole lemons
  • 1 green pepper
  • 1 head of garlic
  • ¼ cup of olive oil

How to Prepare Pickled Green Olives:

  1. Prepare the Olives:
    Start by making a small cut in each olive, or lightly crush each one using a stone or the palm of your hand. Soak the olives in a large bowl filled with water for three days. Make sure to change the water daily to remove the bitterness.

  2. Prepare the Brine:
    In a pot, add 4 cups of water (or 1 liter) and 2 ½ tablespoons of salt. Stir well and bring the mixture to a boil. Once it has boiled, set it aside to cool to room temperature.

  3. Prepare the Vegetables:
    Wash and chop the celery, green pepper, and lemons. Peel the garlic cloves and set them aside.

  4. Mix the Ingredients:
    Drain the olives from their soaking water. In a large mixing bowl, combine the olives with the chopped celery, lemon slices, garlic, and green pepper.

  5. Pack the Jar:
    Pack the olive mixture into a sterilized glass jar. Pour the lemon juice over the olives, followed by the cooled salted water, ensuring the olives are fully submerged. Place a few slices of lemon on top, then pour ¼ cup of olive oil over the surface to help preserve the olives.

  6. Seal and Store:
    Seal the jar tightly and store it in a warm, dry place for about 15 days.

After 15 days, your pickled green olives will be ready to enjoy. Serve them alongside your meals for a delicious and tangy treat.
