Pomegranate cake is a delightful dessert that can be served on special occasions. It is known for its delicious taste and eye-catching appearance, enriched with pomegranate, which is high in vitamins. This cake is easy to prepare and does not require much time or effort.

Cake Mixture:
  • 2 cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1 tablespoon baking powder
  • 1.5 teaspoons baking soda
  • ½ teaspoon salt
  • ½ cup butter (at room temperature)
  • 2 large eggs
  • 1 teaspoon liquid vanilla (or vanilla powder if unavailable)
  • 1.5 cups powdered sugar
  • 1 cup pomegranate juice
  • ½ cup yogurt
Cream Mixture:
  • 1 cup butter
  • 1 teaspoon liquid vanilla (or vanilla powder if unavailable)
  • 3 tablespoons powdered milk
Decoration:
  • 1 large pomegranate (seeds separated)

Preparation Steps:

  1. Prepare the Dry Ingredients:

    • In a medium bowl, sift together the flour, salt, baking powder, cornstarch, and baking soda. Mix well and set aside for later use.
  2. Make the Cake Mixture:

    • In a mixing bowl, combine the butter and sugar, and beat on medium speed for about 2 minutes until you achieve a light yellow mixture.
    • Add the pomegranate juice and yogurt, mixing on low speed for a few minutes until combined.
    • Gradually add the dry ingredients mixture, starting with half and mixing on medium speed. Then add the remaining dry ingredients and continue mixing until you achieve a smooth batter.
  3. Prepare the Cake Pans:

    • Grease two cake pans with melted butter using a brush.
    • Pour half of the cake batter into each pan.
    • Preheat the oven to 180°C (350°F) and place the pans in the middle rack. Bake for 25-30 minutes until the cake rises and turns a light golden color.
  4. Cool the Cakes:

    • Remove the cakes from the oven and let them cool completely. Meanwhile, prepare the cream.
  5. Make the Cream:

    • In a mixing bowl, combine the butter, sugar, vanilla, and powdered milk. Beat on medium speed for 3 minutes until you achieve a smooth and light cream.
  6. Assemble the Cake:

    • Carefully remove the cooled cakes from the pans and place one layer on a serving plate.
    • Spread half of the cream over the first layer and sprinkle with some pomegranate seeds.
    • Place the second cake layer on top and spread the remaining cream evenly on the top and sides of the cake.
    • Finally, sprinkle the remaining pomegranate seeds over the entire cake.
  7. Serve:

    • Serve the pomegranate cake immediately.
