Pomegranate Cake – Recipe and Preparation Method
Pomegranate cake is a delightful dessert that can be served on special occasions. It is known for its delicious taste and eye-catching appearance, enriched with pomegranate, which is high in vitamins. This cake is easy to prepare and does not require much time or effort.
Main Ingredients for Pomegranate Cake:
Cake Mixture:
- 2 cups all-purpose flour
- 2 tablespoons cornstarch
- 1 tablespoon baking powder
- 1.5 teaspoons baking soda
- ½ teaspoon salt
- ½ cup butter (at room temperature)
- 2 large eggs
- 1 teaspoon liquid vanilla (or vanilla powder if unavailable)
- 1.5 cups powdered sugar
- 1 cup pomegranate juice
- ½ cup yogurt
Cream Mixture:
- 1 cup butter
- 1 teaspoon liquid vanilla (or vanilla powder if unavailable)
- 3 tablespoons powdered milk
Decoration:
- 1 large pomegranate (seeds separated)
Preparation Steps:
Prepare the Dry Ingredients:
- In a medium bowl, sift together the flour, salt, baking powder, cornstarch, and baking soda. Mix well and set aside for later use.
Make the Cake Mixture:
- In a mixing bowl, combine the butter and sugar, and beat on medium speed for about 2 minutes until you achieve a light yellow mixture.
- Add the pomegranate juice and yogurt, mixing on low speed for a few minutes until combined.
- Gradually add the dry ingredients mixture, starting with half and mixing on medium speed. Then add the remaining dry ingredients and continue mixing until you achieve a smooth batter.
Prepare the Cake Pans:
- Grease two cake pans with melted butter using a brush.
- Pour half of the cake batter into each pan.
- Preheat the oven to 180°C (350°F) and place the pans in the middle rack. Bake for 25-30 minutes until the cake rises and turns a light golden color.
Cool the Cakes:
- Remove the cakes from the oven and let them cool completely. Meanwhile, prepare the cream.
Make the Cream:
- In a mixing bowl, combine the butter, sugar, vanilla, and powdered milk. Beat on medium speed for 3 minutes until you achieve a smooth and light cream.
Assemble the Cake:
- Carefully remove the cooled cakes from the pans and place one layer on a serving plate.
- Spread half of the cream over the first layer and sprinkle with some pomegranate seeds.
- Place the second cake layer on top and spread the remaining cream evenly on the top and sides of the cake.
- Finally, sprinkle the remaining pomegranate seeds over the entire cake.
Serve:
- Serve the pomegranate cake immediately.
