Potato Kibbeh is one of the most delicious and flavorful appetizers served on the table. It is rich in nutritional value, easy to prepare, though it requires some time. It takes approximately 120 minutes to fully prepare and serves eight people.

Ingredients for Potato Kibbeh:

For the Filling:

  • 2 tablespoons of olive oil
  • 1 medium onion, finely chopped
  • 2 cloves of garlic, minced
  • 500 grams of finely ground beef or lamb
  • 1 teaspoon of salt
  • 1 teaspoon of mixed spices
  • ¼ teaspoon of ground nutmeg
  • ¼ teaspoon of ground black pepper
  • ¼ teaspoon of turmeric
  • 3 tablespoons of tomato paste

For the Kibbeh:

  • 1 kg of potatoes
  • 1½ cups of breadcrumbs (or panko)
  • 2 tablespoons of butter
  • 1 teaspoon of salt
  • ¼ teaspoon of ground black pepper

For the Coating:

  • ½ cup of all-purpose flour
  • 2 large eggs
  • 2 cups of breadcrumbs

For Frying:

  • Sunflower oil

Steps to Prepare Potato Kibbeh:

  1. Preparing the Filling:
    Heat olive oil in a large pan over medium heat. Add the finely chopped onion and minced garlic, stirring continuously until they turn golden. Add the ground meat and cook for 5 minutes. Then, add salt, mixed spices, nutmeg, black pepper, turmeric, and tomato paste. Stir everything together until the meat is fully cooked and the mixture dries up. Set aside to cool.

  2. Cooking the Potatoes:
    In a large pot, place the potatoes and cover them with water. Add a tablespoon of salt and cook over medium heat for about 30 minutes until the potatoes are fully tender. Drain the potatoes, peel them, and let them cool slightly.

  3. Making the Potato Mixture:
    Mash the potatoes thoroughly in a large bowl. Add the breadcrumbs, butter, salt, and black pepper, and mix well until all ingredients are fully incorporated. Cover the bowl with plastic wrap and let the mixture rest for 60 minutes.

  4. Preparing the Coating:
    Set up three wide plates: one with flour, one with beaten eggs, and one with breadcrumbs.

  5. Shaping the Kibbeh:
    Take a small ball of the mashed potato mixture and press it in the center to create a hollow space. Add a spoonful of the meat filling and shape the kibbeh into a small ball or oval shape, sealing the filling inside. Repeat with the remaining potato mixture and filling.

  6. Coating the Kibbeh:
    Roll each kibbeh ball first in the flour, then dip it into the beaten eggs, and finally roll it in breadcrumbs, making sure it's fully coated.

  7. Frying the Kibbeh:
    Heat a generous amount of sunflower oil in a deep frying pan over medium heat. Once the oil is hot, fry the kibbeh balls in batches, turning them until they are golden and crispy on all sides. Once done, transfer the kibbeh to a paper towel-lined plate to drain any excess oil.

  8. Serving:
    Arrange the crispy potato kibbeh on a serving plate and serve hot.
