This juice takes about 1 hour and 5 minutes to be ready to drink, but don’t worry, the preparation only takes about 10 minutes, and cooking requires just 25 minutes.

To prepare six servings of this delicious juice, you will need the following:

  • Pumpkin Base:

    • 895 grams unsweetened pumpkin puree
    • 895 grams water
  • For the Spiced Syrup:

    • 1 cup sugar (200 grams)
    • 1 cup water (240 ml)
    • 4 whole cinnamon sticks
    • 3 whole nutmegs, split in half
  • Additional Ingredients:

    • 3/4 cup apricot juice (180 ml)
    • 3/4 cup apple juice (180 ml)
    • 1 tablespoon lemon juice
    • 1 teaspoon freshly grated nutmeg
    • 1 teaspoon freshly grated cinnamon

How to Prepare Refreshing Pumpkin Juice:

Step 1 – Prepare the Pumpkin Juice:
In a medium-sized pot, combine the pumpkin puree and water. Bring the mixture to a boil over medium-high heat, then remove the pot from the heat. Strain through a cheesecloth into a large bowl. Cover and transfer to the refrigerator to cool for about 30 minutes. The suggested quantity should yield approximately 4 cups.

Step 2 – Make the Spiced Syrup:
In a small pot, combine the sugar, water, cinnamon sticks, and nutmeg halves. Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low and simmer, stirring occasionally, until the sugar dissolves and the syrup thickens, about 3-4 minutes. Transfer to an airtight container and chill until ready to use. The syrup can be stored for up to one month.

Step 3 – Prepare the Spiced Pumpkin Juice:
Now that we have prepared the pumpkin juice in step one and the spiced syrup in step two, we can proceed to the final step to create the finished drink.

In a large pitcher, mix the pumpkin juice, apricot juice, apple juice, half a cup of the spiced syrup, lemon juice, freshly grated nutmeg, and freshly grated cinnamon. Stir well until combined, then serve chilled.
