Pumpkin with Yogurt - The Easiest Way to Prepare This Delicious Recipe
Ingredients:
- 1 kilogram of pumpkin (small-sized pumpkin)
- 2 kilograms of yogurt
- 1 large egg (or 2 small eggs)
- 2 tablespoons of cornstarch
- Salt to taste
- White pepper to taste
- 500 grams of minced meat
- 1 small onion
- 2 tablespoons of ghee
- Pine nuts for garnish
Preparation:
- Preparing the pumpkin: Cut the pumpkin into small cubes, wash them well, and set them aside to drain.
- Frying the pumpkin: In a deep frying pan, heat some vegetable oil and fry the drained pumpkin cubes until they turn golden brown, then remove them from the oil.
- Preparing the yogurt mix: In a blender, combine the yogurt with the egg and cornstarch, and blend for about 3 minutes until smooth.
- Cooking the yogurt: Transfer the blended yogurt mixture to a pot and cook on medium heat while stirring constantly to prevent curdling. Once it starts to boil, add the fried pumpkin cubes and reduce the heat to low.
- Cooking the meat: In another pan, melt the ghee and sauté the finely chopped onion for 2 minutes. Add the minced meat with salt and white pepper, and cook until the meat changes color and is fully cooked. Add the pine nuts and stir.
- Combining: Add two-thirds of the cooked meat and pine nuts to the pumpkin and yogurt mixture.
- Serving: Transfer the pumpkin and yogurt mix to a serving dish and let it cool slightly. Garnish with the remaining meat and pine nuts.
- Serving suggestion: Serve this dish chilled with rice. Enjoy your meal!
