Pumpkin with Yogurt - The Easiest Way to Prepare This Delicious Recipe

Ingredients:

  • 1 kilogram of pumpkin (small-sized pumpkin)
  • 2 kilograms of yogurt
  • 1 large egg (or 2 small eggs)
  • 2 tablespoons of cornstarch
  • Salt to taste
  • White pepper to taste
  • 500 grams of minced meat
  • 1 small onion
  • 2 tablespoons of ghee
  • Pine nuts for garnish

  1. Preparing the pumpkin: Cut the pumpkin into small cubes, wash them well, and set them aside to drain.
  2. Frying the pumpkin: In a deep frying pan, heat some vegetable oil and fry the drained pumpkin cubes until they turn golden brown, then remove them from the oil.
  3. Preparing the yogurt mix: In a blender, combine the yogurt with the egg and cornstarch, and blend for about 3 minutes until smooth.
  4. Cooking the yogurt: Transfer the blended yogurt mixture to a pot and cook on medium heat while stirring constantly to prevent curdling. Once it starts to boil, add the fried pumpkin cubes and reduce the heat to low.
  5. Cooking the meat: In another pan, melt the ghee and sauté the finely chopped onion for 2 minutes. Add the minced meat with salt and white pepper, and cook until the meat changes color and is fully cooked. Add the pine nuts and stir.
  6. Combining: Add two-thirds of the cooked meat and pine nuts to the pumpkin and yogurt mixture.
  7. Serving: Transfer the pumpkin and yogurt mix to a serving dish and let it cool slightly. Garnish with the remaining meat and pine nuts.
  8. Serving suggestion: Serve this dish chilled with rice. Enjoy your meal!
