Pumpkin with Yogurt – Recipe and Preparation Method
Pumpkin with yogurt is a main dish that can be served for lunch or dinner as a luxurious addition to the table. It is known for its delightful taste and rich nutritional content, providing essential nutrients to the body.
This recipe is easy to prepare, though it requires some time, needing about two hours to cook and serving four people.
Main Ingredients for Pumpkin with Yogurt:
Pumpkin Ingredients:
- 500 grams of peeled pumpkin, cut into medium-sized pieces
- 1 tablespoon of toasted pine nuts
- Plenty of sunflower oil
Meat Ingredients:
- 300 grams of lamb (preferably shank pieces)
- 2 sticks of cinnamon
- ¼ small piece of ginger, thinly sliced
- 5 whole cardamom pods
- 4 bay leaves
- 1 tablespoon of salt
Yogurt Sauce Ingredients:
- 4 cups of yogurt
- 2 tablespoons of cornstarch (dissolved in ½ cup of warm water)
- 1 teaspoon of salt
- ¼ cup of liquid cooking cream
Preparation Method:
Cooking the Meat: In a large, deep pot, fill with enough water to cover about two-thirds of the pot. Add the lamb, bay leaves, cinnamon sticks, cardamom pods, ginger slices, and salt. Bring to a boil over medium heat, then cover and simmer on low heat for two hours until the meat is fully cooked.
Preparing the Pumpkin: Heat a wide skillet with plenty of sunflower oil over medium heat. Once hot, fry the pumpkin cubes for about 3 minutes, stirring occasionally. Remove the fried pumpkin with a slotted spoon and place them on parchment paper to drain excess oil. Then, in a large pot, boil plenty of water, add the fried pumpkin cubes, and cook for 15 minutes.
Preparing the Yogurt Sauce: Pour the yogurt into a medium-sized pot and whisk well with a hand whisk until smooth. Place over medium heat, stirring constantly, and add salt. Once the yogurt begins to boil, add the cornstarch mixture and the cooking cream, whisking continuously until the sauce thickens.
Combining the Pumpkin and Yogurt Sauce: Add the boiled pumpkin to the yogurt sauce and cook together for 2 minutes. Add a pinch of salt, stir gently, then transfer the pumpkin with yogurt to a serving dish. Garnish with toasted pine nuts and serve hot. You can accompany the dish with rice or bulgur on the side.
