Quiche – Ingredients and Preparation Method
Quiche is a famous French dish that has become popular in Algeria and Morocco, and is now a favorite in Algerian cuisine. It can be filled with various ingredients such as vegetables, chicken, cheese, or spinach. This dish is often served at large gatherings and special occasions.

Ingredients for Quiche:
For the dough:
- 1 ¼ cups of white flour
- 50 grams of butter
- 1 egg
- A pinch of salt, to taste
- 2 tablespoons of cold water
For the filling:
- 4 tablespoons of cream cheese
- A small cup of cooking cream
- 2 eggs, beaten
- Green or black olives
- 1 medium-sized carrot, diced
- 1 bell pepper, diced
- Mushrooms
- A pinch of salt, oregano, and paprika, to taste
- A small amount of vegetable oil
Preparation Method:
For the dough:
- In a bowl, add the flour and the cut butter pieces. Rub the butter into the flour with your fingers until the mixture resembles breadcrumbs.
- Add the egg and mix well. Gradually add the cold water until the dough comes together. Stop adding water once the dough is firm and smooth.
- Wrap the dough in plastic wrap and place it in the refrigerator for 30 minutes to rest.
For the filling:
- Heat a small amount of vegetable oil in a pan and sauté the mushrooms until they soften and turn golden.
- In a bowl, mix the following ingredients: beaten eggs, olives, cooking cream, diced bell pepper, cream cheese, oregano, salt, diced carrot, and paprika. Stir well to combine.
To assemble the quiche:
- Roll out the dough and place it in a tart pan or quiche pan with fluted edges. You can use a large pan or several smaller ones, depending on your preference.
- Use a fork to poke holes in the base of the dough to prevent it from puffing up during baking.
- Pour the filling over the dough, spreading it evenly.
- Bake in a preheated oven at a high temperature for about 30 minutes, or until the quiche turns golden.
Once cooked, remove the quiche from the oven and serve it hot, accompanied by a salad or soup if desired.
