  • 3 cups of rice.
  • 1 kilogram of chicken.
  • 10 cloves and 10 cardamom pods.
  • 1 tablespoon of salt and mixed spices.
  • 1 cinnamon stick.
  • 3 dried limes (Loomi).
  • 3 green chili peppers.
  • 4 cloves of garlic.
  • 2 onions.
  • ½ cup of corn oil.
  • 3 tomatoes.
  • 3 tablespoons of tomato paste.
  • 1 teaspoon of black pepper.

Preparation Method for Red Rice with Chicken:

  1. Prepare the base:

    • Heat the oil in a medium-sized pot over medium heat.
    • Add the onions and garlic, sautéing until the onions soften.
  2. Add flavor:

    • Add the dried limes and green chili peppers, stirring until they turn golden.
    • Then, add the tomato paste and stir until the mixture thickens.
  3. Spice it up:

    • Add the salt, black pepper, cinnamon, cloves, cardamom, and mixed spices. Stir well to combine.
  4. Add tomatoes:

    • Add the chopped tomatoes to the pot, stirring until the mixture becomes thick and well-combined.
  5. Cook the chicken:

    • Add the chicken pieces to the mixture, then pour water over the chicken to cover it. Cover the pot and cook over medium heat until the chicken is fully cooked.
  6. Prepare the rice:

    • Once the chicken is cooked, remove it from the pot and set it aside. Keep the broth on the heat until it boils.
    • Add the rice to the boiling broth and let it cook for a few more minutes.
  7. Simmer the rice:

    • Cover the pot, reduce the heat to low, and let the rice simmer for 30 minutes until fully cooked.
  8. Grill the chicken:

    • To grill the chicken, coat a baking tray with tomato paste and sprinkle with turmeric. Place the chicken pieces on the tray.
