Roast Duck – Ingredients and Preparation Method

Roast duck is one of the most delicious and rich dishes. Given its richness, it’s best not to serve other heavy dishes alongside it.

Ingredients for Roast Duck

  • 1 large whole duck
  • 1 tablespoon each of: mixed spices, salt, cumin, ground coriander, and paprika
  • ½ teaspoon each of crushed chili flakes and ground ginger
  • 1 teaspoon each of cinnamon and cardamom
  • 2 tablespoons of oil
  • 2 cloves of garlic
  • 1 cup of Egyptian rice
  • 2 bay leaves
  • 1 cinnamon stick
  • Duck liver and gizzards, chopped
  • 2 large onions
  • 3 potatoes, halved
  • 2 large carrots
  • 2 medium onions, also halved

How to Prepare Roast Duck

  1. Sprinkle a small amount of flour over the duck and rub it thoroughly. Wash the duck and set it aside to drain the water.

  2. In a small bowl, mix the salt, coriander, cumin, mixed spices, cardamom, ginger, chili flakes, cinnamon, and paprika. Stir until the spices are well combined.

  3. Place the duck in a large, deep pot and cover it with boiling water. Let it sit for a few seconds, then remove the duck from the water and place it in a large tray.

  4. Pat the duck dry using paper towels.

  5. Rub the spice mixture inside and outside the duck, making sure it is well-coated.

  6. In a medium-sized pot, heat the oil over low heat, then add the chopped onions and garlic. Sauté them until soft, then add the chopped duck liver and gizzards, stirring until the meat is cooked.

  7. Wash the rice and soak it for 10 minutes. Drain it, then add it to the pot with the liver and gizzards.

  8. In a separate pot, bring water to a boil and add the cinnamon stick and bay leaves. Add the rice mixture and cook until the rice is tender. Then, cover the pot and reduce the heat to low, allowing the rice to cook fully.

  9. Once the rice is cooked, stuff the duck with a generous amount of the rice mixture and close it using a wooden skewer.

  10. Prepare an oven bag by sprinkling a little flour inside. Place the halved potatoes, onions, and carrots inside the bag, then place the stuffed duck on top. Seal the bag and poke a few holes in it.

  11. Place the oven bag on a large tray and preheat the oven to 200°C (390°F). Roast the duck for 40 minutes.

  12. After 40 minutes, reduce the oven temperature to 170°C (340°F) and continue roasting the duck for 1.5 to 2 hours, until fully cooked and tender.
