Roast Turkey – Ingredients and Preparation Method
Roast turkey is a beloved dish, especially during holidays and large gatherings. It has a delicious flavor and is a centerpiece at many festive meals.

Ingredients for Roast Turkey:
- 1 large whole turkey (6 to 8 kg)
- 400 grams of melted butter
- Juice and zest of 1 lemon, plus half a lemon
- 1 onion, quartered
- 1 bunch of celery, chopped
- 1 bunch of parsley, chopped
- 2 carrots, sliced
- 1 bunch of green onions
- 2 tablespoons of rosemary and thyme
- ¾ tablespoon honey
- Juice and zest of 2 oranges
- Salt and pepper to taste
For the Sauce:
- Turkey giblets
- 50 grams of butter
- ½ loaf of stale French bread
- 1 medium onion, chopped
- 2 bunches of celery, chopped
- 1 apple, chopped
- 1 cup pitted olives
- 1 cup toasted and chopped walnuts
- Salt and pepper to taste
Preparation Method:
Prepare the Turkey:
- Preheat the oven to 200°C (400°F).
- Wash the turkey thoroughly and pat it dry.
- Rub the inside of the turkey with lemon juice and sprinkle with salt.
- In a bowl, mix the chopped vegetables (excluding the parsley) and stuff them into the turkey cavity. Set aside the parsley for later.
- Wrap the turkey with aluminum foil, tie its legs securely with kitchen string, and sew the cavity closed.
- Carefully loosen the skin of the turkey and insert the melted butter between the skin and the meat, along with the thyme, garlic, and rosemary.
- Brush the turkey all over with the remaining melted butter.
Roasting:
- Place the turkey in a roasting pan, breast-side down.
- Sprinkle the zest of the oranges and lemons over the turkey and pour the juices of both over it. Surround the turkey with the remaining vegetables.
- Roast the turkey in the oven for 30 minutes.
- After 30 minutes, reduce the oven temperature to 100°C (212°F) and continue cooking for 60 to 90 minutes.
- Baste the turkey regularly with the juices from the pan, and during the last 30 minutes, brush it with honey. Finally, turn on the broiler to crisp and brown the skin.
Prepare the Sauce:
- In a pot, place the turkey giblets and cover with water. Add a pinch of salt and boil for 30 minutes.
- In a skillet, melt the butter and toast the bread cubes until golden.
- In another skillet, sauté the chopped onion and celery, then add the walnuts, apple, olives, and giblet broth.
- Season the mixture with salt and pepper, and cook for 30 minutes until everything is well combined.
- Mix the vegetables that were cooked with the turkey into the sauce, blending everything together.
Serve the roast turkey hot, accompanied by the flavorful sauce on the side. Enjoy this delicious and festive meal!
