  • 2 cups of all-purpose flour
  • ¾ cup of water

Filling Ingredients:

  • 5 large eggs
  • 2½ medium tomatoes
  • 2½ teaspoons of sumac powder
  • 2 teaspoons of paprika
  • 2 teaspoons of dried green thyme
  • 5 sprigs of parsley
  • 1 teaspoon of fresh thyme leaves
  • 5 sprigs of fresh mint
  • 5 small pickled cucumbers

Sauce Ingredients:

  • 1 teaspoon of salt
  • ½ teaspoon of ground black pepper
  • 5 tablespoons of liquid tahini
  • 2 cloves of finely minced garlic
  • 10 tablespoons of yogurt
  • Juice of 1 small lemon

Preparation Method:

  1. Preparing the Dough: In a stand mixer bowl, combine the flour, salt, instant yeast, and olive oil. Mix on medium speed for about 3 minutes. Gradually add the water until a soft and smooth dough forms. Remove the dough, shape it into a ball, place it in a bowl, cover tightly with plastic wrap, and let it rest for about 45 minutes until it doubles in size.

  2. Preparing the Filling: Wash the parsley three times and finely chop it. Wash the tomatoes, peel them, and chop them finely. Thinly slice the pickled cucumbers.

  3. In a medium-sized pot, boil water and add the 5 eggs. Cook for 5 minutes after the water boils, then remove the eggs, peel, and slice them into medium-sized slices.

  4. Preparing the Sauce: In a food processor, blend the tahini, yogurt, salt, black pepper, minced garlic, and lemon juice on medium speed for about 2 minutes until well combined.

Assembling the Rolls: Place a piece of saj bread on a flat surface, spread 2 tablespoons of the egg mixture on one end, and add a suitable amount of chopped tomatoes, mint leaves, fresh thyme leaves, and sliced pickled cucumber. Roll up the bread and seal it well. Repeat until all 5 rolls are made. Arrange them on a serving plate and serve immediately.
