Saj Sandwiches – How to Prepare Various Saj Sandwiches
Saj sandwiches are a versatile dish that can be served for breakfast alongside a cup of tea. They are known for their delicious taste and lightness on the stomach, making them a favorite among both children and adults. Moreover, they are easy to prepare and don’t require much time or effort.
Main Ingredients for Preparing Various Saj Sandwiches:
For the Dough:
- 2 cups of whole wheat flour
- 2 cups of white flour
- 2 tablespoons of sugar
- 2 tablespoons of powdered milk
- 1 ½ teaspoons of instant dry yeast
- 1 teaspoon of salt
- 3 tablespoons of sunflower oil
- 1 ½ cups of warm water
For the Filling:
- 1 cup of grated halloumi cheese
- 3 large tomatoes, sliced thinly
- 3 tablespoons of thyme (za'atar)
- 3 tablespoons of olive oil
- 3 large cucumbers, sliced

First, prepare the dough. In a mixer bowl, add the whole wheat flour and one cup of the white flour, followed by the sugar, milk, yeast, and salt. Attach the dough hook and mix on low speed for 60 seconds to combine all the ingredients.
Next, gradually add the water and oil, continuing to mix at medium speed for several minutes until the dough starts to form. Once the dough begins to come together, gradually add the remaining white flour until a smooth, cohesive dough forms. Let the mixer run for a few more minutes until the dough separates from the sides of the bowl.
Once the dough is ready, take it out and place it in an oiled bowl, covering it tightly with plastic wrap. Leave the dough in a warm place for 60 minutes to rise and double in size.
After the dough has risen, divide it into eight balls. Place the dough balls on a large tray, dusting them lightly with flour. Cover the tray with plastic wrap and leave it in a warm place for another 20 minutes to allow the dough to rise again.
Now, take each dough ball and roll it out on a floured surface using a rolling pin, making sure to roll it thin. Heat the saj griddle over high heat for a few minutes until it’s fully hot.
Place the first piece of dough on the saj and let it cook for a few seconds before flipping it. Continue flipping it back and forth until the bread is fully cooked and ready.
For the filling, while the bread is still on the saj, sprinkle the grated cheese over the entire surface of the bread, then add two slices of tomato and one slice of cucumber. Roll the bread into a sandwich and serve it hot.
For the second piece of bread, repeat the cooking process. Once it’s cooked, drizzle olive oil over the surface and sprinkle with thyme. Roll it into a sandwich and serve it immediately.
