Salami Pastries – Recipe and Preparation Method
Salami pastries are a luxurious type of savory pastries that can be served as a main dish for breakfast. Dough Ingredients:
- 3 cups all-purpose flour
- 1 teaspoon dried mint
- 1 tablespoon instant yeast
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 large egg
- ¼ cup sunflower oil
- 1 cup warm milk
Filling Ingredients:
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- ½ large green bell pepper, finely chopped
- 3 large tomatoes, peeled and finely chopped
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
- 1 teaspoon mixed spices
- 1 teaspoon dried coriander
- 1 tablespoon tomato paste
- 1 packet salami
Topping Ingredients:
- 1 large egg
- 1 tablespoon toasted sesame seeds
Preparation Method for Salami Pastries:
Prepare the Dough:
- In a stand mixer bowl, combine 2 ½ cups flour, dried mint, yeast, sugar, salt, and baking powder. Mix on low speed for a few seconds until all ingredients are well combined.
- Add the egg, sunflower oil, and warm milk, then continue mixing on medium speed until a firm dough forms. If the dough is too sticky, gradually add the remaining ½ cup of flour until you achieve the desired consistency.
- Continue mixing on low speed for 5 more minutes until the dough is smooth and elastic. Transfer the dough to an oiled bowl, cover it tightly with plastic wrap, and let it rest in a warm place for 60 minutes or until it doubles in size.
Prepare the Filling:
- In a large, heavy-bottomed skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for a few minutes until it turns light golden.
- Add the minced garlic, chopped green pepper, mixed spices, dried coriander, and chopped tomatoes. Stir continuously until the pepper softens slightly.
- Add ½ cup of water, cover the skillet, and simmer on medium heat for 10 minutes until the mixture thickens. Set aside to cool.
Shape the Pastries:
- On a floured surface, roll out the dough using a rolling pin and cut it into circles using a biscuit cutter. Place a tablespoon of the filling in the center of each circle, add a slice of salami on top, and fold the dough over to form a half-moon shape. Seal the edges firmly. Repeat the process with the remaining dough and filling.
- Arrange the pastries on a baking tray and set aside.
Prepare the Topping:
- In a small bowl, whisk the egg and brush it over the surface of each pastry using a pastry brush. Sprinkle the toasted sesame seeds on top. Let the pastries rest in a warm place for another 10 minutes to rise slightly.
Bake the Pastries:
- Preheat the oven to 180°C (350°F) and place the baking tray on the middle rack. Bake for 10–12 minutes or until the pastries are golden brown.
