- 1 teaspoon of mixed spices
- 2 dried black lemons (loomi)
- 3 cinnamon sticks

- 1/2 small pumpkin, cut into palm-sized pieces
- 4 carrot sticks, sliced lengthwise
- 1 cup of green beans
- 3 small eggplants, cut into halves
- 1/2 medium-sized American squash, cut into cubes
- 1 cup of sliced green beans
- 5 small onions
- Green or red chili peppers, to taste
How to Prepare Saudi Marqooq
Knead the dough and let it rest for 60 minutes.
Sauté the onions, then add the spices and meat, stirring them together before adding the tomatoes.
Pour in boiling water, add the dried black lemons and cinnamon sticks, and cook over medium heat for 60 minutes.
Shape the dough into oval balls, about the size of an orange, and let them rest for another 60 minutes.
After the meat has cooked for 60 minutes, add the vegetables of your choice.
Place the green beans and pumpkin into the pot, and then add the eggplant to the broth. Meanwhile, roll out the dough for the marqooq.
Once the dough is rolled out, add the American squash and onions into the pot on the stove.
