Semifreddo, meaning "half-frozen" in Italian, is a classic dessert often enjoyed in the summer. Preparing Raspberry Sauce:

  • 250 grams of raspberries
  • 50 grams of caster sugar
  • ½ teaspoon of vanilla extract

Preparation Steps:

  1. Place the raspberries and sugar in a small pot with 100 ml of water.
  2. Bring the mixture to a boil and let it simmer for about 5 minutes until the fruit softens.
  3. Stir in the vanilla, then remove from heat and let it cool slightly.
  4. Blend the mixture in a blender until smooth, then strain through a sieve, pressing with the back of a spoon to extract all the juice. Store the sauce in an airtight container.

Ingredients:

  • 1 cup of warm milk
  • 1 cup of oil
  • 1 cup of sugar
  • 3 tablespoons of cocoa powder

Preparation Steps:

  1. In a blender, mix the milk and sugar until the sugar dissolves completely.
  2. Add the cocoa powder and blend well until fully incorporated.
  3. Gradually add the oil while blending continuously until a smooth and delicious chocolate sauce forms.

Preparing the Semifreddo:

Ingredients (Serves 4):

  • 1 small cup of espresso
  • 4 eggs
  • 100 grams of sugar
  • 300 ml Chantilly cream
  • 100 grams of honey
  • 1 teaspoon vanilla flavoring
  • Grated dark chocolate for garnish

Preparation Steps:

  1. In a large bowl, combine the espresso, egg yolks, sugar, and honey. Stir well until the mixture is smooth and fully blended.
  2. In a separate bowl, whisk the egg whites with the Chantilly cream using an electric mixer until the cream becomes firm.
  3. Gently fold the whipped cream mixture into the coffee mixture, add the vanilla flavoring, and mix well using an electric mixer until the mixture is well combined and thick.
  4. Pour the mixture into a cake mold and refrigerate for at least two hours until it is set and ready to serve.
  5. You can add cherries or berries inside the ice cream cake and garnish with grated chocolate, raspberry sauce, or chocolate cocoa sauce.
