  • For the Meat:
    • 1 kg of boneless meat, cut into cubes
    • 3 red onions: 2 large, sliced or cubed, and 1 small, finely chopped
    • Mastic (optional, to taste)
    • Fresh ginger slices (optional)
    • 6 cardamom pods
    • 2 bay leaves
    • 1 cinnamon stick
    • 3 teaspoons of salt
    • 4 tablespoons of cornstarch
    • 8 cups of plain yogurt
    • 1 tablespoon of ghee
    • Pine nuts (optional, for garnish)

Preparation:

  1. Cook the Meat:
    In a large pot over medium heat, add a few mastic pods for a unique flavor, followed by the meat cubes. Stir and sear the meat until it changes color. Add a slice of ginger, cardamom pods, bay leaves, a cinnamon stick, and the sliced onions.

  2. Add Water:
    Pour enough water to cover the meat completely, then add salt to taste. Cover the pot and let the meat cook on medium heat until tender, about 1.5 hours or longer.

  3. Prepare the Yogurt Sauce:
    In a separate pot, add the yogurt, ensuring it's full-fat for a richer flavor. Add the cornstarch and salt, then whisk gently until the yogurt mixture is smooth and the cornstarch is well incorporated.

  4. Cook the Yogurt Sauce:
    Place the pot on high to medium heat, stirring gently with a whisk or a large spoon until the mixture thickens and begins to boil.

  5. Combine with Meat:
    Add the cooked meat to the yogurt sauce. You can also add the cooked onions if desired. Allow the mixture to simmer and absorb the flavors, adding meat broth if needed for a richer taste.
