Ingredients for Shrimp and Spiced Rice:

Shrimp and Spiced Rice

  • 500g of shrimp, peeled and cleaned.
  • 4 tablespoons of tomato paste.
  • 2 onions, peeled and washed.
  • 5 garlic cloves, minced.
  • ¼ tablespoon of ground cumin.
  • ¼ tablespoon of black pepper.
  • ¼ tablespoon of salt.
  • ¼ tablespoon of crushed mastic.
  • 4½ cups of water.
  • 1 tablespoon of vegetable oil.
  • 3 cups of Egyptian rice (or any available short-grain rice).

Steps for Preparing Shrimp and Spiced Rice:

  1. Sauté the shrimp:
In a large pot, heat the vegetable oil over medium heat. Add the cleaned shrimp and the crushed mastic, sautéing them together until the shrimp starts to cook through.

  2. Add the tomato paste and onions:
Stir in the tomato paste, then add the sliced onions. Continue to cook until the onions soften and mix well with the shrimp and tomato paste.

  3. Season the dish:
Add the minced garlic, cumin, black pepper, and salt. Stir the mixture until the ingredients are well-combined and you see large bubbles forming.

  4. Add water:
Gradually pour in the 4½ cups of water, cup by cup, stirring in between. Let the mixture come to a boil.

  5. Prepare the rice:
While the water is heating, thoroughly rinse the rice until the water runs clear, removing excess starch. Drain and add the rice to the pot with the shrimp and spices.

  6. Cook the rice:
Cover the pot with a lid, lower the heat to a simmer, and let the rice cook for about 20 minutes. Stir occasionally to ensure the rice absorbs the flavors evenly.

  7. Check the rice:
After 20 minutes, check the rice to see if all the water has been absorbed. If the rice is still not fully cooked, add a little more water and let it continue to cook until the rice is tender.

  8. Serve:
Once the rice is fully cooked and fluffy, transfer the shrimp and rice mixture to a deep serving dish.

This dish pairs well with a side salad for a complete and satisfying meal.
