Shrimp Kabsa – Recipe and Preparation Method
Shrimp Kabsa is a luxurious seafood dish that can be served as a main course during lunch. It is distinguished by its delicious flavor and numerous benefits due to the shrimp's rich vitamins and minerals that are beneficial for the human body. This recipe is easy to prepare and does not require much time or effort.
Main Ingredients for Shrimp Kabsa:
- 2 ½ cups of Basmati rice (or any other type of rice as desired)
- 1 kg of large shrimp
For the Spices:
2 teaspoons of ground cumin
1 teaspoon of dried coriander
1 teaspoon of paprika
1 teaspoon of turmeric
1 teaspoon of ground cardamom
½ teaspoon of ground dried lime (loomi)
1 teaspoon of salt
½ teaspoon of ground black pepper
½ cup of sunflower oil
1 large onion, finely chopped
6 cloves of garlic, minced
1 tablespoon of grated ginger
2 bay leaves
2 large red bell peppers, finely chopped
2 large green bell peppers, finely chopped
2 large tomatoes, finely chopped
2 tablespoons of freshly squeezed lemon juice
1 cup of finely chopped fresh coriander
Preparation Steps:
Soak the Rice:
- In a wide dish, wash the rice several times and then cover it with hot water, letting it soak for 15 minutes.
Prepare the Spice Mixture:
- In a medium bowl, combine the ground cumin, dried coriander, paprika, turmeric, ground cardamom, ground dried lime, salt, and black pepper. Mix well and set aside.
Cook the Vegetables:
- In a large pot, heat the sunflower oil over medium heat. Once hot, add the chopped onion, minced garlic, grated ginger, bay leaves, red bell pepper, and green bell pepper. Stir for several minutes until the onion and garlic are fragrant and the vegetables are lightly golden.
Add the Spices:
- Add the prepared spice mixture to the pot and stir well. Then add the chopped tomatoes, chopped coriander, and lemon juice, continuing to stir for a few minutes. Finally, add the shrimp and stir for about 3 minutes, allowing the shrimp to absorb the spices.
Cook the Rice:
- Add 3 cups of warm water to the pot and bring to a boil. Once boiling, add the soaked rice and give it a gentle stir. Allow it to boil, then reduce the heat, cover the pot, and let it simmer on low heat for about 30 minutes until the rice is fully cooked.
Serve:
- Turn off the heat, remove the lid, and gently fluff the shrimp kabsa. Serve it hot in a platter.
