Spiced Pasta Kabsa – Recipe and Preparation Method
Spiced pasta kabsa is a unique and delightful dish that can be served for dinner during family gatherings or with friends. It is known for its delicious flavor and lightness on the stomach, and it is easy to prepare without requiring much time or effort.
Main Ingredients for Spiced Pasta Kabsa:
- 1 teaspoon mixed spices
- 1 teaspoon paprika
- 1 teaspoon crushed chili pepper
- 1 teaspoon turmeric
- 2 teaspoons salt
- ¼ teaspoon ground black pepper
- 2 tablespoons sunflower oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon grated ginger
- 500 grams of chicken, cut into medium-sized pieces
- 1 green chili pepper, finely chopped
- 2 bay leaves
- 2 cinnamon sticks
- 10 whole cardamom pods
- 2 dried lemons (also known as loomi)
- 3 tablespoons tomato paste
- 300 grams of pasta
For Serving:
- 10 sprigs of finely chopped parsley
- 1 lemon, sliced
Preparation Steps:
Prepare the Spice Mix:
- In a medium bowl, combine the mixed spices, paprika, crushed chili, turmeric, salt, and black pepper. Stir well with a spoon until all ingredients are mixed together, then set aside for later use.
Cook the Aromatics:
- In a large, deep pot, heat the sunflower oil over medium heat. Once hot, add the chopped onion, minced garlic, and grated ginger. Stir continuously for a few minutes until fragrant and the onion turns golden.
Add the Chicken:
- Add the chicken pieces to the pot and continue stirring until they are browned. Then, add the chopped green chili, bay leaves, cinnamon sticks, cardamom pods, dried lemons, and tomato paste. Mix everything well to combine.
Simmer the Chicken:
- Add 6 cups of water to the pot and bring it to a simmer. Cover and cook for about 30 minutes until the chicken is fully cooked.
Cook the Pasta:
- After 30 minutes, add the pasta to the pot. Cook for approximately 15 minutes, or until the pasta is tender. If the broth is low, feel free to add an extra cup of water according to your preference.
Serve:
- Once cooked, turn off the heat and transfer the pasta kabsa to a serving dish. Garnish with finely chopped parsley and serve hot, accompanied by a small plate of lemon slices.
