Ingredients for Spinach with Béchamel:
- 2 tablespoons of vegetable oil
- 1 red onion, diced into small cubes
- 700 grams of washed and chopped spinach leaves
- A pinch of salt (to taste)
- A pinch of black pepper
- 200 grams of mixed boiled vegetables (peas, potatoes, carrots, corn)
- Grated mozzarella cheese as needed
Ingredients for Béchamel:
- 1 teaspoon of butter
- 1 teaspoon of flour
- 200 ml of milk (about 1 cup)
- A pinch of black pepper and salt (to taste)
Preparation Method:
- In a suitable pan over medium heat, add the vegetable oil and diced onion, sautéing until the onions are slightly softened.
- Add the chopped spinach leaves to the onions and continue to stir until the spinach wilts and becomes tender.
- Season with salt and black pepper to taste, then add the boiled mixed vegetables, stir, and let them cook briefly on the heat.
- In another pot, start preparing the béchamel sauce by melting the butter over medium heat.
- Add the flour, whisking continuously, then gradually pour in the milk, whisking until the mixture thickens slightly, forming the desired béchamel sauce consistency.
- Season the béchamel with a pinch of black pepper and salt to taste, whisking again to ensure a smooth mixture.
- Prepare small serving dishes and layer the spinach and vegetable mixture first. Pour the béchamel sauce over the top, and sprinkle with grated mozzarella cheese.
