Stewed Meat with Vegetables – Recipe and Preparation Method
Stewed Meat with Vegetables is a main dish often served at lunch, known for its delicious taste and nutritional benefits. - 1 kg of meat with bones, cut into pieces

- 3 medium zucchinis, cut into medium cubes
- 3 medium eggplants, cut into medium cubes
- 3 medium tomatoes, peeled and diced
- 1 cup okra
- 1 large green bell pepper, thinly sliced
- 1 green chili pepper, thinly sliced
- 3 tablespoons tomato paste
- 2 teaspoons salt
- ½ teaspoon ground black pepper
- 1 tablespoon lemon juice
- 5 cloves garlic, minced
- ¼ cup finely chopped fresh coriander
Preparation Method:
Sear the Meat:
- In a large, deep pot, heat the olive oil over medium heat. Add the meat pieces and sear them until golden brown on all sides. Remove the meat and set it aside in a separate dish.
Sauté the Onions:
- In the same pot, add the chopped onions and sauté over medium heat until they turn light golden. Return the seared meat to the pot, add the diced tomatoes, tomato paste, salt, and ground black pepper. Stir the mixture briefly, then add 2 cups of water. Cover the pot and let it simmer on low heat for 60 minutes until the meat is fully cooked.
Add the Vegetables:
- Remove the lid and add the potatoes, zucchini, eggplant, bell pepper, green chili, and okra to the pot. Stir to combine all the ingredients, then add an additional cup of water. Cover the pot again and let it cook on low heat for 30 minutes until the vegetables are tender.
Final Touches:
- Add the lemon juice, minced garlic, and chopped coriander. Stir well and let the stew simmer for a few more minutes until the sauce thickens.
Serve:
- Transfer the stew to a serving dish and serve hot, alongside white rice if desired.
