Ingredients for Strawberry Jelly Cake:
Cake Ingredients:
- 3 medium eggs at room temperature
- 1 teaspoon vanilla extract or vanilla powder
- 1 cup sugar
- ½ cup vegetable oil
- 1 cup warm milk or 3 tablespoons powdered milk dissolved in water
- 1¾ cups sifted flour
- 3 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon ghee or vegetable oil for greasing
Jelly Ingredients:
Bottom Layer:
- 2 packets of plant-based jelly
- 2 cups water
- Fresh strawberries, sliced as needed
Top Layer:
- 4 packets of plant-based jelly
- 4 cups hot water
How to Prepare Strawberry Jelly Cake:
Prepare the Cake Batter:
- In an electric mixer, add the eggs and vanilla extract. Blend for about 2 minutes until the color of the eggs changes.
- Add the sugar and continue to mix on high speed for about 3 minutes until the mixture becomes creamy.
- Gradually add the vegetable oil and mix for another minute.
- Add the warm milk and blend for about 2 minutes until all ingredients are well combined.
- In a separate bowl, sift together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing thoroughly between each addition.
Bake the Cake:
- Pour the cake batter into a greased cake pan and bake in a preheated oven at 180°C (350°F) until done. Once baked, allow the cake to cool slightly before turning it out of the pan.
Prepare the Jelly Layers:
- Clean the same cake pan and lightly grease it with a bit of oil. In a separate bowl, prepare the jelly mixture.
- Combine 2 packets of jelly powder with 2 cups of water, stirring with a whisk until fully dissolved.
- Pour half of the jelly mixture into the cake pan, add sliced strawberries on top, and then pour the remaining half of the jelly mixture to form the first layer.
Assemble the Cake with the Jelly:
- Place the cooled cake on top of the first layer of jelly and strawberries in the pan.
- Prepare the second layer of jelly using 4 packets of jelly powder and 4 cups of hot water, stirring until dissolved. Pour this mixture over the cake to form the top layer.
- Place the pan in the refrigerator and chill for about 3 hours.
Unmold and Serve:
- To remove the cake, place the pan briefly in a larger tray filled with hot water for 4 seconds to loosen the jelly. Carefully invert the cake onto a serving plate.
